Really Yummy Granola

This granola is so yummy. Just had to share. Heat 6 Tbsp of veggie oil, 2/3 cup honey, and 2 Tbsp water in a sauce pan on medium heat. Bring to a slow boil. Turn off heat and add 2 tsp vanilla.

In a large mixing bowl, combine 4 cups rolled oats, 2 cups of rice cereal (such as Rice Krispies, 1 cup wheat germ (although I've been leaving this out as I'm currently on a wheat-free diet), 4 Tbsp brown sugar, and 1/2 tsp salt. Pour the liquid mixture over the dry ingredients and mix well until completely coated.

Bake on a cookie sheet at 250 degrees for 15 minutes. Stir and then bake another 15 minutes.



Let cool, and then you can add dried fruit, nuts, or chocolate chips. Another thing that I do is add the granola to about half a box of corn flakes, and this makes a much healthier version of "Honey Bunches of Oats."




Store your granola in an airtight container. This recipe makes two cookie sheets full, by the way! Just FYI, anytime you bake any granola recipe, keep a close eye on it while it's baking because it burns easily. I'll never forget the one time I popped two cookie sheets of granola in the oven when the kids were very young, and thought I'd take a quick five minute shower. When I came out of my bedroom, the entire house was filled with smoke and the granola was black. Now I never leave baking granola unattended!

Thanks for the recipe - I'm excited to try it. I made granola awhile ago, but this recipe looks much healthier!
