Marinated Artichoke and Feta Salad

A couple of nights ago, I concocted a really yummy salad to serve over the grilled chicken I made, and I thought I'd share it with you...


Ingredients:

1 jar marinated artichoke hearts, drained and chopped
Green onions (I think I used around 10), whites and greens, chopped
1/2 yellow or red pepper, chopped
1/2 jar black olives, chopped
1/4 cup chopped red onion
feta cheese (I didn't measure, sorry. Just eyeball it until it looks good.)
2-ish tbsp of olive oil
1-ish (maybe a little more) tbsp of red wine vinegar (Again, I apologize, I hardly ever measure things)
salt and pepper to taste


Mix all of the above ingredients together. You can chill it if you like, but I served it right away over chicken I had grilled with a side of asparagus and gluten-free fusilli noodles. I'm thinking that this would also taste really yummy served over grilled salmon, and I personally thought it was yummy just to eat all by its lovely self.


This is a great, light, summery salad! And easy too!
