Almost Whole-Wheat Chocolate Chip Cookies

I found this delicious chocolate chip cookie recipe in the More-with-Less cookbook. I love that it uses more whole wheat flour than white flour.

Lily and I whipped up a batch of these for the freezer this past weekend.

Makes 5-6 dozen
Bake at 375 degrees
8-10 minutes

Cream together:
1 cup butter
1 cup brown sugar
1 cup granulated sugar

Add:
2 eggs
1 T hot water
2 t. vanilla

Beat until fluffy. Stir together and add:
1 cup white flour
1 1/2 cups plus 2/3 cup whole wheat flour
1 t. salt
1 t. soda

Add:
2 cups chocolate chips

Drop by teaspoonfuls on greased cookie sheet. Bake at 375 for 8-10 minutes or until light brown.
Enjoy!
Note: The More-With-Less cookbook was a cookbook written collaboratively by the Mennonite community. The cookbook explores our nation's irresponsibility when it comes to our resources, particularly food, and the impact it has on the poverty-stricken areas of the world. The recipes included in the cookbook are made with simple, easily accessible ingredients, but at the same time provide tasty, nutritious-packed food.

I will sooooo be making these tomorrow. Have I ever told you with my Amish obsession? Literally, since I was a kid spending my summers in MD, I was in love with their lifestyle... you would never know by looking at how we live, but they are on to something... I'll start with the more simple baking...
Thanks for sharing!

The More-With-Less cookbook is one of my favourites. I used it as my boys were growing up and gave a new copy to my daughter-in-law as well.
